ALS Extreme Terroir, Αλς, White 2020, 750ml

Three talented young viticulturists - Elias Roussakis, Alexis Kolovos and Giannis Papaikonomou - with a common vision to highlight the incredible potential of the legendary terroir of Santorini, join their skills in the ALS project.
ALS is a super-collectible Assyrtiko of Santorini that comes from a selection of grape bunches from the best vines of the island. We are talking about the supreme stage of sorting the raw material.
The harvest starts late in the afternoon and continues until the small evening hours, in order for the grapes to keep their coolness. At dawn they travel in special refrigerated containers to Syros, to the winery of N. Hatzakis, the fourth of the group.
There, after the short pre-fermentation extraction they have undergone along the way, the grapes are passed through a pneumatic press without de-grinding, vinified with classic white vinification in stainless steel tanks and the wine remains in the wine sludge for 11 months until bottling.
The project started in 2018 and in January 2021 the first crop was released. The total production reaches only 1,300 bottles.
ALS may not be labeled PDO Santorini due to the fact that it is vinified and bottled outside the production area, but it is clearly one of the best Super Premium Assyrtiko on the island.
Light golden color with the typical aromas of the Santorini variety in their noblest versions, with a body so wonderfully full but at the same time light, mineral and herbal aromas, warmth of the morning sun and characteristic gusts of salt that come in waves, making the wine rich and at the same time so fine and refreshing.
Contrapunto balances that bring to mind questions, senses and images such as "how light a volcanic rock can be" or "how refreshing the salty breeze can be on a warm summer morning on the edge of the Caldera".
ALS is great for immediate consumption, but we are sure that in 5 years it will be simply magnificent.
This wine is the great summer discovery of the Stellar Cellar and the available bottles are minimal. Hurry up!
