Thymiopoulos, Rapsani Terra Petra, Red 2019, 750ml

Apostolos Thymiopoulos, a connoisseur of the flavor of Xinomavro in Naoussa, is taking the next step in trying to discover the limits of the variety in the second zone of origin, Rapsani.
According to him: "The rocky soil (granite and shale) in the highest altitude zones of Rapsani is ideal for Xinomavro. The weather is dry, so we have wonderful aromas, fantastic structure and true fruit purity. The grapes are more tannic and the yields are one third lower in Rapsani compared to Naoussa, so I think the wine will need more ripening. It will be exciting to see the development. "
Blend 50% Xinomavro, 35% Krasato, 15% Cross. Biodynamic vineyard (without certification).
Soils: Slate and granite. 70% of the cases have an average age of 20 years while 30% of the cases have an average age of 70 years, I said.
Winemaking: Degreasing, extraction for 40 days in a stainless steel tank. Fermentation with native doughs. Filtrated. 15 months old in large oak barrels of 500lt.
Features: Ruby color with dark highlights. Wonderful bouquet of strawberry and violet aromas alternating with hints of spices, tobacco, minerality. In the mouth, a real expression of red fruit with silky tannins and an elegant, "polished" structure.
Over time, it evolves into a glass, showing even more aromatic routes. If Naoussa Alta and I travel to Piemonte, Terra Petra reminds us of Burgundy.
