Vassaltis - Santorini Oak Barrel - White - 2017 - 1,5L

The Vassaltis winery is the newest in Santorini and embodies the vision of the creator of Giannis Valambos and the oenological team for the production of great wines.

The classic mineral and lemony aroma of Santorini is dressed here with a smoky costume and a few tannins from the wood, with the wine of Vassaltis leaving the oak signature typical. It is one of the wines that deserve to stay in a cellar as in 2-3 years Santorini Barrel Aged will integrate the oak even better and will give us even more intense melancholy emotions.

Typical, white wine vinification techniques, 100% whole cluster fermentation started in a stainless steel tank and finished in french oak barrels of 500lt.

It remained for 6 months in the barrels, for 5 months in the tank, on its lees and 8 more months in bottle.

Yellow with golden hints. Toasty and vanilla aromas, wet stone, citrus, very complex. Vanilla, salt, citrus, refreshing acidity, well structured and balanced with the oak, full bodied, very long after-taste.
