A few information about Vassaltis Winery

-It's the newest winery in Santorini- but that doesn't mean that its vineyards are young (60 years old, I was self-rooting in Vourvoulos, Santorini)
-It was created by the youngest winemakers (Yiannis Valaboupis (financially in London), Elias Roussakis (oenologist, Agricultural University of Athens & Agro Montpellier, Giannis Papaikonomou) with winemaking experiences in Chile, Rhone & N. Zealand.
- The name Vasaltis comes from the rock that results from the rapid cooling of the basaltic lava, a rock associated with the peculiarity of Santorini. It is a word that perfectly combines volcanic terroir with the dynamics of wines.

- Produced labels: Vassaltis Santorini, Vassaltis Barrel, Nassitis white, Vassaltis red and Pet Nat. Total production of 100,000 bottles.

The new proposal is a sparkling wine from Assyrtiko and Athiri that has been produced with the méthode ancestral, according to which no second fermentation is caused, but the bottling of the wine is done before the completion of the alcoholic fermentation, with the result that the CO2 produced is "imprisoned" in the bottle.

These wines, called Petillant Naturel (Pet-Nat for short), have a relatively low alcohol content and usually contain a certain percentage of sugar.

Ripe citrus, peach and flowers on the nose, soft sweetness in taste, cooling acidity with gentle bubbles.

Ideal for aperitifs, fruit salads, cheese varieties but also for spicy dishes.
