Assyrtiko and oak seem made for one another, and here we have a superb example of that relationship. The name Idisma Drios reflects the rich sweetness imparted to the wine by its sojourn in the oak barrels.
After the skin contact maceration, the must is fermented in new and once used French oak barrels and matures in contact with its fine lees for about 5 months, for maximum body and aromatic complexity.
This wine has a bright golden yellow colour, and a complex aroma compounded of caramelised citrus fruits with persistent underlying oak notes.
In the mouth, the sense of volume is perfectly balanced by a lively crispyness.
Enjoy with shellfish, oily fish, poultry or pork with white sauces, spicy cheeses.
Responds well to further ageing.
